Assemble all the ingredients.
- 2
In a large bowl, dissolve yeast in 2 1/2 cups warm water. Let sit until creamy, about 10 minutes.
- 3
Meanwhile, lightly grease a large bowl. Lightly grease two baking sheets and dust them with cornmeal. Set aside.
- 4
Add 4 cups flour, oil, and salt to the yeast mixture; beat with an electric mixer until well combined. Add the remaining flour, 1/2 cup at a time, beating on medium speed until well combined after each addition.
- 5
When the dough comes together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 6 minutes. Place the dough in the greased bowl and turn to coat. Cover with a damp cloth and let rise in a warm spot until doubled in size, about 40 minutes.
- 6
Punch down the dough and divide it into 8 equal pieces. Shape each piece into a 4-inch round loaf; place four loaves on each prepared baking sheet. Cover and let rise in a warm place until doubled in size, about 35 minutes.
- 7
Preheat the oven to 400 degrees F (200 degrees C).
- 8
Whisk egg white and 1 tablespoon water together in a small bowl. Brush half of the egg wash over the loaves.
- 9
Bake in the preheated oven for 15 minutes. Brush the loaves again with the remaining egg wash and continue baking until golden brown, 10 to 15 more minutes. Cool on wire racks.
- 10
Create bread bowls by slicing a 1/2-inch-thick piece from the top of each loaf. Scoop out the center bread, leaving a 3/4-inch-thick shell.
- 11
Fill the bread bowls with hot soup and serve right away.
